Spiced Rum-Flavored Banoffee Pie

This Spiced Rum-Flavored Banoffee Pie is the perfect indulgent treat! A buttery biscuit base is topped with a cream layer, spiced rum-flavored bananas and a rich, caramelized topping. Enjoy this special dessert with a dollop of whipped cream and a sprinkle of cinnamon.

Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 (14-ounce) can sweetened condensed milk
  • 1/4 cup spiced rum
  • 3 medium bananas, sliced
  • 1 cup whipped cream
  • Ground cinnamon, for garnish

Directions:

  1. Preheat oven to 350°F. Line a 9-inch pie pan with parchment paper.
  2. In a medium bowl, combine the butter, graham cracker crumbs, sugar, cinnamon, and nutmeg. Mix until ingredients are well combined. Press the mixture into the bottom and up the sides of the prepared pan and bake for 10 minutes, or until golden brown. Set aside to cool.
  3. In a medium saucepan over medium heat, combine the sweetened condensed milk and spiced rum and bring to a low boil, stirring constantly. Reduce heat and simmer, stirring constantly, for 5-7 minutes, or until thickened. Remove from heat and let cool for 10 minutes.
  4. Spread the cooled condensed milk mixture over the cooled crust. Top with banana slices and whipped cream. Sprinkle with ground cinnamon and refrigerate for at least 1 hour before serving.
