Ingredients:
- 2 and 1/4 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup (2 sticks) salted butter, softened to room temperature
- 1 and 1/2 cups granulated sugar
- 1/2 cup champagne or sparkling white wine
- 3 large eggs, at room temperature
- 2 tsp vanilla extract
- 1/2 cup buttermilk, room temperature
Directions:

Preheat oven to 350°F. Line two 12-count muffin tins with cupcake liners and set aside.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, using an electric mixer, cream together the butter and sugar until light and fluffy.

Add the champagne and mix until combined.

Add the eggs one at a time, mixing after each addition.

Add the vanilla extract and mix until combined.

Add the dry ingredients to the wet ingredients in two batches, alternating with the buttermilk, and mix until just combined.

Divide the batter among the cupcake liners.

Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting.
