Soft Molasses Ginger Cookies
These soft and chewy cookies are the perfect blend of sweet molasses and spicy ginger. The perfect addition to your holiday baking, or just a great treat for any time of year.
Ingredients:
- 2 1/2 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3/4 cup butter, melted
- 1 cup white sugar
- 1 egg
- 1 tablespoon water
- 1/4 cup molasses
- 1/2 cup white sugar for rolling
Directions:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, nutmeg, and salt. Set aside.
- In a large bowl, cream together the melted butter and 1 cup sugar until smooth. Beat in the egg, then stir in the water and molasses. Gradually stir the dry ingredients into the wet mixture until just blended.
- Roll the dough into walnut sized balls, and roll the balls in the remaining 1/2 cup of sugar. Place the cookies 2 inches apart on an ungreased cookie sheet, and flatten slightly.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
