Soft Molasses Ginger Cookies

These soft and chewy cookies are the perfect blend of sweet molasses and spicy ginger. The perfect addition to your holiday baking, or just a great treat for any time of year.

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup butter, melted
  • 1 cup white sugar
  • 1 egg
  • 1 tablespoon water
  • 1/4 cup molasses
  • 1/2 cup white sugar for rolling

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, nutmeg, and salt. Set aside.
  3. In a large bowl, cream together the melted butter and 1 cup sugar until smooth. Beat in the egg, then stir in the water and molasses. Gradually stir the dry ingredients into the wet mixture until just blended.
  4. Roll the dough into walnut sized balls, and roll the balls in the remaining 1/2 cup of sugar. Place the cookies 2 inches apart on an ungreased cookie sheet, and flatten slightly.
  5. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
