Ingredients:

  • 2 cups all-purpose flour

  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 4 ounces bacon, cooked and crumbled
  • 2 tablespoons bourbon
  • For the Glaze:
  • 2 cups powdered sugar
  • 3 tablespoons bourbon
  • 2 tablespoons melted butter

Directions:

  1. Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugars until light and fluffy. Add the eggs one at a time, beating well after each addition. Add in the molasses, vanilla, bacon, and bourbon. Beat until combined.
  4. Gradually add the flour mixture to the butter mixture, stirring until just combined.
  5. Drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown and the centers are just set.
  6. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
