- 1 cup unsalted butter, room temperature
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
- 4 ounces bacon, cooked and crumbled
- 2 tablespoons bourbon
- For the Glaze:
- 2 cups powdered sugar
- 3 tablespoons bourbon
- 2 tablespoons melted butter
Directions:
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and sugars until light and fluffy. Add the eggs one at a time, beating well after each addition. Add in the molasses, vanilla, bacon, and bourbon. Beat until combined.
- Gradually add the flour mixture to the butter mixture, stirring until just combined.
- Drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown and the centers are just set.
- Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- To make the glaze, whisk together the powdered sugar, bourbon, and melted butter until smooth. Drizzle over the cooled cookies and let set before serving. Enjoy!
