Smoked Salmon and Dill Quiche Pie

Ingredients:

  • 1 9-inch refrigerated piecrust
  • 2 tablespoons butter
  • 1 small onion, diced
  • 1/2 cup chopped bell pepper
  • 4 ounces smoked salmon, flaked
  • 1/4 cup chopped fresh dill
  • 6 eggs
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Directions:

  1. Preheat oven to 350 degrees. Grease a 9-inch pie plate.
  2. Unroll piecrust and fit it into the pie plate. Crimp the edges.
  3. In a large skillet, melt butter over medium-high heat. Add onion and bell pepper and cook until softened, about 5 minutes.
  4. Add smoked salmon, dill, eggs, cream, salt, and pepper. Stir to combine.
  5. Pour mixture into the piecrust. Bake for 30-35 minutes or until the center is set.
  6. Let cool before slicing and serving.
