Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup heavy cream
  • 3 bananas, ripe but firm
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1/4 cup heavy cream, chilled

Directions:

  1. Preheat the oven to 350 degrees F. Grease a 9-inch round pie plate with butter.
  2. In a medium bowl, mix together the flour, butter, granulated sugar, salt, and cinnamon. Using a pastry blender or two knives, cut the butter into the flour mixture until it’s crumbly. Press the mixture into the bottom and up the sides of the pie plate. Bake for 15 minutes.
  3. Meanwhile, make the filling. In a medium saucepan, combine the brown sugar and 1/2 cup cream over medium heat. Cook, stirring constantly, until the mixture begins to boil. Remove from heat and let cool.
  4. Peel and slice the bananas and spread them over the cooled crust. Sprinkle with walnuts. Pour the cooled cream mixture over the bananas and walnuts.
  5. In a medium bowl, whisk together the remaining 1/4 cup cream, vanilla extract, and powdered sugar until light and fluffy. Spread over the banana layer. Refrigerate for at least 4 hours before serving.
