Savory Sweet Potato and Kale Quiche
This savory quiche is the perfect combination of sweet potatoes and kale, baked in a flaky crust. Bursting with flavor, this quiche is sure to be a crowd pleaser for any gathering.
Ingredients:
- 1 9-inch unbaked pie crust
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 large sweet potato, peeled and diced
- 2 cups chopped kale leaves
- 3 eggs
- 1 cup half-and-half
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup shredded cheddar cheese
Directions:
- Preheat oven to 400°F. Place the pie crust into a 9-inch pie plate and set aside.
- Heat olive oil in a large skillet over medium heat. Add onions and garlic and cook until softened, about 5 minutes. Add sweet potato and cook until just tender, about 8 minutes. Add kale and cook until wilted, about 3 minutes.
- In a large bowl, whisk together eggs, half-and-half, thyme, smoked paprika, salt, and pepper. Stir in sweet potato and kale mixture and shredded cheese.
- Pour the mixture into the prepared pie crust and bake in preheated oven for 25 minutes, or until the quiche is set and lightly golden brown.
- Let cool for 15 minutes before serving.
