Savory Sweet Potato and Kale Quiche

This savory quiche is the perfect combination of sweet potatoes and kale, baked in a flaky crust. Bursting with flavor, this quiche is sure to be a crowd pleaser for any gathering.

Ingredients:

  • 1 9-inch unbaked pie crust
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 large sweet potato, peeled and diced
  • 2 cups chopped kale leaves
  • 3 eggs
  • 1 cup half-and-half
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup shredded cheddar cheese

Directions:

  1. Preheat oven to 400°F. Place the pie crust into a 9-inch pie plate and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add onions and garlic and cook until softened, about 5 minutes. Add sweet potato and cook until just tender, about 8 minutes. Add kale and cook until wilted, about 3 minutes.
  3. In a large bowl, whisk together eggs, half-and-half, thyme, smoked paprika, salt, and pepper. Stir in sweet potato and kale mixture and shredded cheese.
  4. Pour the mixture into the prepared pie crust and bake in preheated oven for 25 minutes, or until the quiche is set and lightly golden brown.
  5. Let cool for 15 minutes before serving.
