Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 cup crumbled blue cheese
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts

Directions:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
  3. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, blue cheese, and both sugars until light and fluffy, about 3 minutes.
  4. Add the egg and vanilla and beat until combined. With the mixer on low, slowly add the dry ingredients and mix until just combined. Stir in the walnuts.
  5. Using a 1-tablespoon scoop, drop balls of dough onto the prepared baking sheet, leaving 1 inch between each cookie. Bake for 12 to 15 minutes, until the edges of the cookies are lightly browned.
  6. Transfer the baking sheet to a wire rack to cool for 5 minutes before transferring the cookies directly to the rack to cool completely.
