Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups mini pretzels, coarsely chopped
- 1/2 cup caramel bits
- 1/2 teaspoon sea salt
Directions:
- Preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In the bowl of a stand mixer, or in a large bowl with a hand mixer, beat butter and sugars until light and fluffy, about 2 minutes.
- Add egg and vanilla extract and mix until combined.
- Add dry ingredients and mix until just combined.
- Stir in pretzels, caramel bits and sea salt until combined.
- Using a cookie scoop (or tablespoon), scoop dough onto prepared baking sheets, spacing 2 inches apart.
- Bake for 12-14 minutes, or until edges are golden brown. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
