Rosemary and Lemon Scones
This recipe is perfect for a light and refreshing treat for breakfast, brunch, or dessert. The rosemary and lemon combination makes these scones subtly herby and zesty. Enjoy them warm with coffee or tea, or as a sweet snack.
Ingredients:
- 2 cups all-purpose flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup cold butter, cubed
- 3/4 cup buttermilk
- 1/4 cup freshly squeezed lemon juice
- 2 teaspoons fresh rosemary leaves, chopped
- 1 egg, beaten
- 2 tablespoons raw sugar for topping
Directions:
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda. Use a pastry blender or two forks to cut in the butter until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the buttermilk, lemon juice, rosemary, and egg. Add to the flour mixture, stirring just until moist.
- Turn dough out onto a lightly floured surface and knead lightly 8 to 10 times. Pat dough into an 8-inch circle and cut into 8 wedges.
- Place scones onto prepared baking sheet. Brush with additional buttermilk and sprinkle with raw sugar. Bake for 15 to 18 minutes or until golden brown.
- Remove from oven and let cool before serving.
