Rosemary and Lemon Scones

This recipe is perfect for a light and refreshing treat for breakfast, brunch, or dessert. The rosemary and lemon combination makes these scones subtly herby and zesty. Enjoy them warm with coffee or tea, or as a sweet snack.

Ingredients:

  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup cold butter, cubed
  • 3/4 cup buttermilk
  • 1/4 cup freshly squeezed lemon juice
  • 2 teaspoons fresh rosemary leaves, chopped
  • 1 egg, beaten
  • 2 tablespoons raw sugar for topping

Directions:

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda. Use a pastry blender or two forks to cut in the butter until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together the buttermilk, lemon juice, rosemary, and egg. Add to the flour mixture, stirring just until moist.
  4. Turn dough out onto a lightly floured surface and knead lightly 8 to 10 times. Pat dough into an 8-inch circle and cut into 8 wedges.
  5. Place scones onto prepared baking sheet. Brush with additional buttermilk and sprinkle with raw sugar. Bake for 15 to 18 minutes or until golden brown.
  6. Remove from oven and let cool before serving.
