Rooibos Tea-Infused Milktart

This unique take on the classic South African Milktart dessert combines the rich creamy flavor of the traditional recipe with the subtle sweetness of Rooibos tea. The result is a flavorful and delicious treat that is perfect for any occasion.

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup butter, melted
  • 1 egg, lightly beaten
  • 2 tablespoons Rooibos tea leaves
  • 1 cup evaporated milk
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup white sugar
  • 1/2 cup raisins

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch tart pan.
  2. In a medium bowl, combine the flour and sugar. Stir in the melted butter and egg until the mixture is crumbly. Press the mixture into the bottom and up the sides of the tart pan.
  3. In a small bowl, combine the Rooibos tea leaves with 2 tablespoons of boiling water. Let the mixture steep for 5 minutes. Strain the tea leaves and discard them.
  4. In a medium saucepan over medium-high heat, combine the evaporated milk, cornstarch, cinnamon, nutmeg, ginger, salt, and white sugar. Stir in the Rooibos tea and raisins. Bring to a boil and cook for 2 minutes. Remove from heat.
  5. Pour the mixture into the prepared tart pan. Bake for 25 minutes in the preheated oven, or until the top is lightly browned.
  6. Allow the tart to cool before serving.
