Ricotta Orange Cake with Toasted Almonds

Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- Pinch of salt
- ¾ cup granulated sugar
- 1 cup ricotta cheese
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup freshly squeezed orange juice
- 1 teaspoon orange zest
- 1/3 cup toasted slivered almonds
Directions:
- Preheat oven to 350 degrees Fahrenheit. Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, whisk together the sugar, ricotta, oil, eggs, and vanilla extract until smooth. Whisk in the orange juice and zest until combined.
- Slowly add the flour mixture to the wet ingredients and stir until combined. Fold in the toasted almonds.
