Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon red food coloring
- 1 cup buttermilk
- For the glaze:
- 3 tablespoons butter, melted
- 2 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- 3-4 tablespoons heavy cream
Directions:
- Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
- In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Add the vanilla and food coloring, mix until combined.
- Add the dry ingredients in three parts, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- To make the glaze, whisk together the melted butter, confectioners’ sugar, vanilla extract and enough heavy cream to reach a spreadable consistency. Spread over the cooled cake.
