Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon red food coloring
  • 1 cup buttermilk
  • For the glaze:
  • 3 tablespoons butter, melted
  • 2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 3-4 tablespoons heavy cream

Directions:

  1. Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
  3. In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Add the vanilla and food coloring, mix until combined.
  4. Add the dry ingredients in three parts, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. To make the glaze, whisk together the melted butter, confectioners’ sugar, vanilla extract and enough heavy cream to reach a spreadable consistency. Spread over the cooled cake.
