Ingredients:

  • 2 cups of all-purpose flour
  • 2/3 cup of cocoa powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 cup of butter
  • 1 cup of granulated sugar
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1 cup of buttermilk
  • 1/2 cup of semi-sweet chocolate chips
  • 1 cup of heavy cream
  • 1/2 cup of semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350 degrees F. Line cupcake tin with paper liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat together the butter and sugar until light and fluffy. Beat in the eggs, one at a time. Add in the vanilla extract and mix until combined. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Fold in the buttermilk and chocolate chips.
  4. Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
  5. To make the ganache, place the chocolate chips in a medium bowl. Heat the heavy cream in a small saucepan over medium heat until it just begins to boil. Pour the hot cream over the chocolate chips and let sit for 5 minutes. Stir until smooth and creamy. Let cool slightly, then spoon the ganache over the cooled cupcakes.
