Rich Chocolate Cupcakes with Chocolate Ganache
This delicious recipe for rich chocolate cupcakes with chocolate ganache is the perfect indulgent treat. The moist chocolate cupcakes are topped with a decadent chocolate ganache icing, making this an irresistible dessert that everyone will love.
Ingredients:
- 2 cups of all-purpose flour
- 2/3 cup of cocoa powder
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1/2 cup of butter
- 1 cup of granulated sugar
- 2 eggs
- 1 teaspoon of vanilla extract
- 1 cup of buttermilk
- 1/2 cup of semi-sweet chocolate chips
- 1 cup of heavy cream
- 1/2 cup of semi-sweet chocolate chips
Directions:
- Preheat oven to 350 degrees F. Line cupcake tin with paper liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, beat together the butter and sugar until light and fluffy. Beat in the eggs, one at a time. Add in the vanilla extract and mix until combined. Slowly add the dry ingredients to the wet ingredients and mix until just combined. Fold in the buttermilk and chocolate chips.
- Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
- To make the ganache, place the chocolate chips in a medium bowl. Heat the heavy cream in a small saucepan over medium heat until it just begins to boil. Pour the hot cream over the chocolate chips and let sit for 5 minutes. Stir until smooth and creamy. Let cool slightly, then spoon the ganache over the cooled cupcakes.
