Ingredients:

  • 1 9-inch pre-baked pie crust
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 medium eggplant, diced
  • 1 medium zucchini, diced
  • 1 cup diced fresh tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded Swiss cheese
  • 3 eggs, beaten
  • 1 cup half-and-half

Directions:

  1. Preheat oven to 350 F. Grease a 9-inch pie pan.
  2. In a large skillet, heat oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add eggplant, zucchini, tomatoes, oregano, thyme, salt, and pepper. Cook until vegetables are soft, about 8 minutes.
  4. Spread the vegetables in the prepared pie pan and sprinkle with cheese. In a medium bowl, whisk together eggs and half-and-half. Pour over vegetables. Bake until quiche is set and golden brown, about 30 minutes.
  5. Let cool for 10 minutes before cutting. Serve warm.
