Pumpkin Spice Latte-Flavored Cupcakes Recipe

Ingredients:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup pumpkin puree
- 1/2 cup milk
- 1/2 cup heavy cream
- 3 Tbsp espresso powder
Directions:
- Preheat oven to 350°F and line a 12 muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
- In a large bowl, beat together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Add the vanilla extract, pumpkin puree, and milk and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Divide the batter evenly among the muffin cups and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- In a medium bowl, beat together the heavy cream and espresso powder until stiff peaks form.
- Pipe or spread the whipped cream topping onto the cooled cupcakes and serve.
