Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 3 Tbsp espresso powder

Directions:

  1. Preheat oven to 350°F and line a 12 muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Add the vanilla extract, pumpkin puree, and milk and mix until well combined.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. Divide the batter evenly among the muffin cups and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. In a medium bowl, beat together the heavy cream and espresso powder until stiff peaks form.
  9. Pipe or spread the whipped cream topping onto the cooled cupcakes and serve.
