This Pistachio Shortcrust Pie is a delicious, easy-to-make dessert that will have your family and friends wanting more. Ingredients:

  • 1 cup of all-purpose flour
  • 1/2 cup of cold butter, cubed
  • 2 tablespoons of sugar
  • 1/4 teaspoon of salt
  • 2 tablespoons of cold water
  • 1/2 cup of shelled pistachios, ground into a paste
  • 1/2 cup of heavy cream
  • 1/2 cup of whole milk
  • 3 eggs, beaten
  • 1/4 cup of sugar
  • 1/4 teaspoon of ground nutmeg

Directions:

  1. Preheat the oven to 375 degrees F. Grease a 9-inch pie dish with butter.
  2. In a medium bowl, mix together the flour, butter, sugar, and salt until crumbly. Add the cold water and mix until a soft dough forms. Press the dough into the greased pie dish, making sure to evenly distribute it on the bottom and sides of the dish.
  3. In a small bowl, mix together the ground pistachios and the heavy cream until completely combined. Pour the pistachio mixture into the pie dish, spreading it evenly over the bottom.
  4. In a medium bowl, whisk together the milk, eggs, sugar, and nutmeg until completely combined. Pour the egg mixture over the pistachio mixture in the pie dish.
  5. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the center is set. Let cool before serving.
  6. Garnish with additional crushed pistachios, if desired.
