Pistachio Shortcrust Pie
This Pistachio Shortcrust Pie is a delicious, easy-to-make dessert that will have your family and friends wanting more. Ingredients:
- 1 cup of all-purpose flour
- 1/2 cup of cold butter, cubed
- 2 tablespoons of sugar
- 1/4 teaspoon of salt
- 2 tablespoons of cold water
- 1/2 cup of shelled pistachios, ground into a paste
- 1/2 cup of heavy cream
- 1/2 cup of whole milk
- 3 eggs, beaten
- 1/4 cup of sugar
- 1/4 teaspoon of ground nutmeg
Directions:
- Preheat the oven to 375 degrees F. Grease a 9-inch pie dish with butter.
- In a medium bowl, mix together the flour, butter, sugar, and salt until crumbly. Add the cold water and mix until a soft dough forms. Press the dough into the greased pie dish, making sure to evenly distribute it on the bottom and sides of the dish.
- In a small bowl, mix together the ground pistachios and the heavy cream until completely combined. Pour the pistachio mixture into the pie dish, spreading it evenly over the bottom.
- In a medium bowl, whisk together the milk, eggs, sugar, and nutmeg until completely combined. Pour the egg mixture over the pistachio mixture in the pie dish.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the center is set. Let cool before serving.
- Garnish with additional crushed pistachios, if desired.
