Pancakes with Cottage Cheese and Peach Compote

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter
  • 1 cup buttermilk
  • 1 large egg
  • 1/2 cup cottage cheese
  • 1/4 cup diced peaches
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter

Directions:

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the melted butter, buttermilk, and egg. Add the wet ingredients to the dry ingredients and stir until just combined.
  2. Heat a large nonstick skillet over medium heat. Grease with butter. Ladle 1/4 cup of batter onto the pan and cook for 2-3 minutes per side, until golden brown. Repeat with remaining batter.
  3. In a small saucepan, combine the cottage cheese, diced peaches, honey, vanilla extract, and 2 tablespoons of butter. Cook over medium heat until heated through, about 5 minutes. Serve the pancakes with the cottage cheese and peach compote.
