Pancakes with Cottage Cheese and Peach Compote
This delicious breakfast recipe is a great way to start your day off right! Soft pancakes are topped with a creamy cottage cheese and a sweet peach compote. The combination of flavors and textures make this a winning morning meal.
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons melted butter
- 1 cup buttermilk
- 1 large egg
- 1/2 cup cottage cheese
- 1/4 cup diced peaches
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 2 tablespoons butter
Directions:
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the melted butter, buttermilk, and egg. Add the wet ingredients to the dry ingredients and stir until just combined.
- Heat a large nonstick skillet over medium heat. Grease with butter. Ladle 1/4 cup of batter onto the pan and cook for 2-3 minutes per side, until golden brown. Repeat with remaining batter.
- In a small saucepan, combine the cottage cheese, diced peaches, honey, vanilla extract, and 2 tablespoons of butter. Cook over medium heat until heated through, about 5 minutes. Serve the pancakes with the cottage cheese and peach compote.
