Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups diced apples
  • 1/2 cup apple cider
  • 1/2 cup brown sugar

Directions:

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  2. In a separate bowl, cream together the butter and white sugar until light and fluffy. Beat in the eggs and vanilla extract.
  3. Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the diced apples.
  4. Melt 1/4 cup of butter in a large skillet over medium heat. Pour the batter into the skillet and spread it out evenly. Cook for 5 minutes, or until the bottom is golden brown.
  5. In a small saucepan, bring the apple cider and brown sugar to a boil over medium heat. Reduce the heat to low and simmer for 5 minutes, or until the mixture thickens.
  6. Flip the cake and cook for an additional 5 minutes, or until golden brown. Drizzle with the apple cider glaze and serve warm.
