This Paleo Carrot Cake with Coconut Frosting is an easy, healthy and delicious dessert that is sure to please. It’s made with almond flour, coconut oil, carrots, and a simple coconut frosting. This cake is perfect for any occasion or just for a sweet treat!
Ingredients:
- 2 cups almond flour
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
- 3 large eggs, lightly beaten
- 1/2 cup melted coconut oil
- 1/2 cup honey
- 1 tsp vanilla extract
- 2 cups grated carrots
- 1/2 cup shredded coconut
- 1/2 cup coconut butter, melted
- 2 tablespoons honey
- 1 teaspoon vanilla extract
For the Coconut Frosting:
Directions:
- Preheat oven to 350°F and grease a 9-inch round cake pan with coconut oil.
- In a medium bowl, whisk together almond flour, baking soda, cinnamon, and salt.
- In a large bowl, whisk together eggs, coconut oil, honey, and vanilla extract.
- Add dry ingredients to wet ingredients and mix until combined.
- Fold in grated carrots and shredded coconut.
- Pour batter into prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let cake cool completely before frosting.
- To make the frosting, whisk together melted coconut butter, honey, and vanilla extract. Spread frosting over cooled cake and sprinkle with shredded coconut.
