Ingredients:

  • 2 1/2 cups Oreo cookie crumbs
  • 1/4 cup melted butter
  • 2 8-ounce packages cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream

Directions:

  1. Preheat oven to 350 degrees F. Grease a 9-inch springform pan and set aside.
  2. In a medium bowl, mix together the Oreo cookie crumbs and melted butter. Press the mixture into the bottom of the springform pan.
  3. In a large bowl, beat together the cream cheese and sugar until light and creamy. Beat in eggs one at a time, then stir in the vanilla extract.
  4. Pour the cream cheese mixture into the prepared crust. Bake for 35-40 minutes, or until the center is almost set.
  5. In a small bowl, beat the heavy cream until stiff peaks form. Fold into the cooled cheesecake. Refrigerate for at least 3 hours before serving.
