Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 cups freshly grated carrots
  • 2 oranges, zested and juiced
  • 1 cup walnuts, chopped
  • 1 (8-ounce) package cream cheese, softened
  • ½ cup butter, softened
  • 4 cups confectioners’ sugar
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest

Directions:

  1. Preheat oven to 350°F. Grease and flour three 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, beat the oil and sugar until light and fluffy. Beat in the eggs, one at a time, until well combined. Beat in the vanilla extract.
  4. Stir in the flour mixture until just combined. Fold in the carrots, oranges, and walnuts. Divide the batter among the prepared pans.
  5. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  6. To make the frosting, beat the cream cheese and butter until light and fluffy. Beat in the confectioners’ sugar, one cup at a time. Add the orange juice and zest and beat until creamy. Spread the frosting between the layers and on the top and sides of the cake.
