Ingredients:

  • 2 cups buttermilk
  • 2 eggs
  • 4 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Directions:

  1. In a large bowl, sift together the flour, baking powder, baking soda, sugar, and salt.
  2. In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Heat a griddle or large skillet over medium heat. Grease with butter or cooking spray.
  5. Pour 1/4 cup of the batter onto the griddle or skillet. Cook until the edges are set and bubbles begin to form on the surface, about 2-3 minutes.
  6. Flip the pancake and continue to cook until golden brown, about 1-2 minutes.
  7. Repeat with the remaining batter. Serve hot with butter and syrup. Enjoy!
