Ingredients:

Directions:

  2. In a large bowl, stir together the flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the eggs, oil, honey, and zucchini.
  3. Add the wet ingredients to the dry ingredients and stir just until blended. Fill the prepared muffin cups about three-fourths full. Bake for 18 to 20 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean.
