Oat Flour Pancakes with Blueberry Sauce

Ingredients:
- 1 cup oat flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup almond milk
- 1 teaspoon pure vanilla extract
- 1 tablespoon coconut oil, melted
- 3 tablespoons maple syrup
- 1/2 cup fresh or frozen blueberries
- 1 tablespoon coconut sugar
- 1/2 teaspoon ground cinnamon
Directions:
- In a medium bowl, combine the oat flour, baking powder, and salt.
- In a separate bowl, whisk together the almond milk, vanilla extract, and coconut oil.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Heat a nonstick skillet or griddle over medium heat and spray with nonstick cooking spray.
- Pour 1/4 cup of the batter onto the skillet and cook for 3 minutes, or until the edges are lightly browned.
- Flip the pancake and cook for an additional 2 minutes, or until lightly browned.
- Repeat with the remaining batter.
- To make the blueberry sauce, combine the blueberries, coconut sugar, and cinnamon in a small saucepan over medium heat.
- Stir the mixture occasionally until the blueberries have broken down and the sauce is thickened, about 10 minutes.
- Serve the pancakes with the blueberry sauce and a drizzle of maple syrup.
