Ingredients:

  • 1 store-bought 9-inch pie crust
  • 2 tablespoons olive oil
  • 1 large shallot, minced
  • 16 ounces sliced mushrooms
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 2 cups shredded Swiss cheese
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground nutmeg

Directions:

  1. Preheat oven to 375°F.
  2. Place the pie crust in a 9-inch pie plate.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the shallot and mushrooms and cook until softened, about 5 minutes.
  5. Add the salt, pepper, garlic, and thyme and cook for an additional 2 minutes.
  6. Remove from heat and let cool for 5 minutes.
  7. Spread the mushrooms in the bottom of the pie crust.
  8. Sprinkle the Swiss cheese over the mushrooms.
  9. Sprinkle the nutmeg over the top of the cheese.
  10. Bake in preheated oven for 30 minutes, or until the cheese is melted and the crust is golden brown.
  11. Let cool for 10 minutes before serving.
