Mozzarella, Tomato, & Basil Quiche
This Mozzarella, Tomato, & Basil Quiche is the perfect make-ahead breakfast that’s full of flavor and packed with nutrition. A delicious blend of mozzarella, tomatoes, and fresh basil are baked in a rich egg custard that is sure to make everyone happy. Serve this quiche with a side of greens for a complete meal.
Ingredients:
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 3 tablespoons butter, melted
- 2 cups mozzarella cheese, grated
- 2 cups fresh tomatoes, diced
- 1/4 cup fresh basil, chopped
- 4 large eggs
- 1 cup heavy cream
Directions:
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9 inch pie dish.
- In a medium bowl, mix together flour, salt and pepper. Add melted butter and mix until crumbly. Press evenly into the bottom and up the sides of the prepared pie dish.
- In a large bowl, mix together mozzarella, tomatoes, and basil. Spread evenly in the prepared pie dish.
- In a medium bowl, whisk together eggs and cream. Pour over the cheese and tomatoes in the dish. Bake in preheated oven for 25 to 30 minutes, or until center is set.
- Allow to cool before slicing and serving.
