Minty Chocolate Chip Cupcakes
These delicious cupcakes are the perfect combination of mint and chocolate. With a light green cupcake base and chocolate chips sprinkled on top, these cupcakes are sure to satisfy your sweet tooth.
Ingredients:
- 1 ½ cups (190g) all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup (115g) unsalted butter, room temperature
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons peppermint extract
- 1 teaspoon vanilla extract
- ½ cup (120ml) buttermilk
- 2-3 drops of green food coloring
- 1 cup (170g) semi-sweet chocolate chips
Directions:
- Preheat oven to 350°F (177°C). Line a cupcake pan with cupcake liners.
- In a large bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy, about 1 minute.
- Add the sugar and beat on high speed until light and fluffy, about 2 minutes.
- Add the eggs, peppermint extract, and vanilla extract. Beat on medium-high speed until combined, about 1 minute.
- With the mixer running on low speed, add the dry ingredients in three additions alternating with the buttermilk, beginning and ending with the dry ingredients, and beat until just incorporated.
- Add the green food coloring and mix until combined. Do not overmix.
- Fold in the chocolate chips.
- Fill each cupcake liner about two-thirds full. Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean.
- Allow cupcakes to cool for 10 minutes before transferring to a wire rack to cool completely.
