Minty Chocolate Chip Cupcakes

These delicious cupcakes are the perfect combination of mint and chocolate. With a light green cupcake base and chocolate chips sprinkled on top, these cupcakes are sure to satisfy your sweet tooth.

Ingredients:

  • 1 ½ cups (190g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, room temperature
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons peppermint extract
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) buttermilk
  • 2-3 drops of green food coloring
  • 1 cup (170g) semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350°F (177°C). Line a cupcake pan with cupcake liners.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy, about 1 minute.
  4. Add the sugar and beat on high speed until light and fluffy, about 2 minutes.
  5. Add the eggs, peppermint extract, and vanilla extract. Beat on medium-high speed until combined, about 1 minute.
  6. With the mixer running on low speed, add the dry ingredients in three additions alternating with the buttermilk, beginning and ending with the dry ingredients, and beat until just incorporated.
  7. Add the green food coloring and mix until combined. Do not overmix.
  8. Fold in the chocolate chips.
  9. Fill each cupcake liner about two-thirds full. Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow cupcakes to cool for 10 minutes before transferring to a wire rack to cool completely.
