Ingredients:

  • 1 package of pre-made shortcrust pastry
  • 1 cup of cream cheese, softened
  • 1 cup of heavy cream
  • 2 eggs
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of cornstarch
  • 1/2 teaspoon of ground cinnamon
  • 1 pint of your favorite ice cream, softened
  • 1/4 cup of sugar
  • 1 teaspoon of ground cinnamon

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch pie dish.
  2. Roll out the shortcrust pastry and line the base and sides of the pie dish. Bake for 10 minutes.
  3. In a medium bowl, mix together the cream cheese and heavy cream until light and fluffy. Spread the mixture over the pre-baked pastry base.
  4. In a separate bowl, combine the eggs, sugar, vanilla extract, cornstarch, and cinnamon. Whisk until combined.
  5. Pour the egg mixture over the cream cheese layer and bake for 25-30 minutes. Cool completely.
  6. Spread the softened ice cream over the cooled custard layer. Sprinkle with the sugar and cinnamon.
  7. Freeze for at least 4 hours or until firm.
