This Milk Tart Ice Cream Pie is a delicious treat that combines all the best elements of a traditional milk tart with a creamy, delicious ice cream. The base of the pie is a shortcrust pastry with a layer of cream cheese on top. We then layer in a creamy custard, which is combined with a delicious, creamy ice cream. Ingredients:
- 1 package of pre-made shortcrust pastry
- 1 cup of cream cheese, softened
- 1 cup of heavy cream
- 2 eggs
- 1/2 cup of sugar
- 1 teaspoon of vanilla extract
- 2 tablespoons of cornstarch
- 1/2 teaspoon of ground cinnamon
- 1 pint of your favorite ice cream, softened
- 1/4 cup of sugar
- 1 teaspoon of ground cinnamon
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch pie dish.
- Roll out the shortcrust pastry and line the base and sides of the pie dish. Bake for 10 minutes.
- In a medium bowl, mix together the cream cheese and heavy cream until light and fluffy. Spread the mixture over the pre-baked pastry base.
- In a separate bowl, combine the eggs, sugar, vanilla extract, cornstarch, and cinnamon. Whisk until combined.
- Pour the egg mixture over the cream cheese layer and bake for 25-30 minutes. Cool completely.
- Spread the softened ice cream over the cooled custard layer. Sprinkle with the sugar and cinnamon.
- Freeze for at least 4 hours or until firm.
