Mediterranean Quiche with Spinach, Feta, and Olives

This quiche is a delicious combination of Mediterranean flavors that are sure to please. The combination of spinach, feta, and olives is a classic that is always a hit. The dish is easy to make and can be served as an appetizer or a main dish.

Ingredients:

  • 1 refrigerated pie crust
  • 1/4 cup olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 2 cups spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup pitted kalamata olives, chopped
  • 4 eggs
  • 1 cup milk

Directions:

  1. Preheat oven to 375°F. Unroll the pie crust and fit it into a 9-inch pie plate. Crimp the edges of the crust and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the salt, pepper, oregano, thyme, and red pepper flakes and stir to combine.
  3. Add the spinach and cook until wilted, about 5 minutes. Stir in the feta and olives and remove from the heat.
  4. In a medium bowl, whisk together the eggs and milk. Add the spinach mixture to the pie crust and pour the egg mixture over the top. Bake for 30 minutes, or until the quiche is golden and set.
