Ingredients:

  • 1/2 cup unsalted butter, melted
  • 2/3 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup whole milk
  • 2 tablespoons espresso powder
  • 1 teaspoon vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup confectioners’ sugar
  • Unsweetened cocoa powder, for garnish

Directions:

  1. Preheat oven to 350°F and line a 12-cup muffin tin with cupcake liners. In a medium bowl, whisk together the melted butter and granulated sugar until combined.
  2. Add the eggs, milk, espresso powder, and vanilla extract and whisk until combined. In a separate bowl, whisk together the flour, baking powder, baking soda, cocoa powder, and salt. Slowly add the dry ingredients to the wet ingredients and whisk until just combined.
  3. Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  4. Meanwhile, in the bowl of a stand mixer fitted with the whisk attachment, whip the mascarpone cheese, heavy cream, and confectioners’ sugar together until light and fluffy. Transfer the frosting to a piping bag fitted with a star tip.
  5. Allow the cupcakes to cool completely before frosting. Pipe the frosting onto each cupcake and garnish with a sprinkle of cocoa powder.
