The fluffy and moist cupcake, made with espresso and cocoa powder, is topped with a light and creamy mascarpone frosting and garnished with a sprinkle of cocoa powder. Ingredients:
- 1/2 cup unsalted butter, melted
- 2/3 cup granulated sugar
- 2 large eggs, room temperature
- 1/2 cup whole milk
- 2 tablespoons espresso powder
- 1 teaspoon vanilla extract
- 1 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/4 cup confectioners’ sugar
- Unsweetened cocoa powder, for garnish
Directions:
- Preheat oven to 350°F and line a 12-cup muffin tin with cupcake liners. In a medium bowl, whisk together the melted butter and granulated sugar until combined.
- Add the eggs, milk, espresso powder, and vanilla extract and whisk until combined. In a separate bowl, whisk together the flour, baking powder, baking soda, cocoa powder, and salt. Slowly add the dry ingredients to the wet ingredients and whisk until just combined.
- Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Meanwhile, in the bowl of a stand mixer fitted with the whisk attachment, whip the mascarpone cheese, heavy cream, and confectioners’ sugar together until light and fluffy. Transfer the frosting to a piping bag fitted with a star tip.
- Allow the cupcakes to cool completely before frosting. Pipe the frosting onto each cupcake and garnish with a sprinkle of cocoa powder.
