Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup peeled and chopped apples
- 1/2 cup cooked and crumbled bacon
- 1/3 cup maple syrup
Directions:
- Preheat oven to 350°F. Grease an 8-inch round cake pan and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, using an electric mixer, beat together the butter and sugar until light and fluffy. Add the egg and vanilla extract and beat until combined. Add the buttermilk and continue to beat until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix. Fold in the apples and bacon.
- Pour the batter into the prepared cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Meanwhile, in a small saucepan, heat the maple syrup over medium heat. Bring to a simmer and cook for 3-5 minutes, or until the syrup has thickened. Remove from heat and set aside.
- Remove the cake from the oven and let cool for 10 minutes before removing from the pan. Drizzle with the maple syrup and serve.
