Manchego and Chorizo Quiche
This flavorful quiche combines the nutty flavor of Manchego cheese with the smokiness of chorizo for a delicious and savory dish. The crust is light and flaky, and the filling is warm and cheesy. Serve it as a main dish or as an appetizer for your next gathering.
Ingredients:
- 1 9-inch pre-made pastry shell
- 1/2 cup diced chorizo
- 3/4 cup shredded Manchego cheese
- 3 eggs
- 1/2 cup heavy cream
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions:
- Preheat oven to 375 degrees F. Line the pastry shell with parchment paper and pie weights.
- Bake for 10 minutes. Remove from oven and carefully remove parchment paper and pie weights.
- In a medium bowl, whisk together eggs and heavy cream. Add in diced chorizo and shredded Manchego cheese, stirring to combine.
- Pour egg mixture into pastry shell. Sprinkle with salt and pepper. Bake for 30 minutes, or until the quiche is golden brown and the center is set.
- Let cool before serving.
