Manchego and Chorizo Quiche

This flavorful quiche combines the nutty flavor of Manchego cheese with the smokiness of chorizo for a delicious and savory dish. The crust is light and flaky, and the filling is warm and cheesy. Serve it as a main dish or as an appetizer for your next gathering.

Ingredients:

  • 1 9-inch pre-made pastry shell
  • 1/2 cup diced chorizo
  • 3/4 cup shredded Manchego cheese
  • 3 eggs
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions:

  1. Preheat oven to 375 degrees F. Line the pastry shell with parchment paper and pie weights.
  2. Bake for 10 minutes. Remove from oven and carefully remove parchment paper and pie weights.
  3. In a medium bowl, whisk together eggs and heavy cream. Add in diced chorizo and shredded Manchego cheese, stirring to combine.
  4. Pour egg mixture into pastry shell. Sprinkle with salt and pepper. Bake for 30 minutes, or until the quiche is golden brown and the center is set.
  5. Let cool before serving.
