Luscious Red Velvet Trifle with Creamy Cheese Custard Layers

Ingredients:
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoon vanilla extract
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3 tablespoons cocoa powder
- 1 1/4 cups all-purpose flour
- 1/2 cup buttermilk
- 3/4 cup red food coloring
- 1/4 teaspoon salt
- 1/2 cup heavy cream
- 1/2 cup sugar
- 3 tablespoons cornstarch
- 1 cup whole milk
- 1/2 cup cream cheese, softened
- 2 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 pint fresh berries, such as blueberries, strawberries, and/or raspberries
- 1/2 cup heavy cream, whipped
Directions:
- Preheat oven to 350 degrees F. Grease a 9-inch round cake pan with butter and line the bottom with parchment paper. Set aside.
- In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together baking powder, baking soda, cocoa powder, and flour. Add this mixture to the wet ingredients and beat until well combined.
- Add buttermilk and red food coloring and mix until fully incorporated. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Meanwhile, in a medium saucepan, heat the cream, sugar, cornstarch, and milk over medium-high heat. Stir continuously until mixture thickens and begins to bubble. Turn off heat and stir in cream cheese, butter, vanilla extract, and salt. Transfer mixture to a bowl and let cool completely.
- Once cake has cooled, cut into cubes and layer the bottom of a trifle dish with half of the cubes. Spread half of the cooled custard mixture on top of the cake cubes.
- Layer the remaining cake cubes and custard mixture and top with fresh berries. Spread the whipped cream over the top of the trifle and refrigerate for at least 1 hour before serving.
