Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3 tablespoons cocoa powder
  • 1 1/4 cups all-purpose flour
  • 1/2 cup buttermilk
  • 3/4 cup red food coloring
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1 cup whole milk
  • 1/2 cup cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 pint fresh berries, such as blueberries, strawberries, and/or raspberries
  • 1/2 cup heavy cream, whipped

Directions:

  1. Preheat oven to 350 degrees F. Grease a 9-inch round cake pan with butter and line the bottom with parchment paper. Set aside.
  2. In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla extract.
  3. In a separate bowl, whisk together baking powder, baking soda, cocoa powder, and flour. Add this mixture to the wet ingredients and beat until well combined.
  4. Add buttermilk and red food coloring and mix until fully incorporated. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Meanwhile, in a medium saucepan, heat the cream, sugar, cornstarch, and milk over medium-high heat. Stir continuously until mixture thickens and begins to bubble. Turn off heat and stir in cream cheese, butter, vanilla extract, and salt. Transfer mixture to a bowl and let cool completely.
  6. Once cake has cooled, cut into cubes and layer the bottom of a trifle dish with half of the cubes. Spread half of the cooled custard mixture on top of the cake cubes.
  7. Layer the remaining cake cubes and custard mixture and top with fresh berries. Spread the whipped cream over the top of the trifle and refrigerate for at least 1 hour before serving.
