Ingredients:
- 2 cups all-purpose flour

- 1/2 cup (1 stick) unsalted butter, melted and cooled
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 2 tablespoons lemon zest
- 3 tablespoons fresh thyme leaves, plus more for garnish
- For the glaze:
- 1/2 cup powdered sugar
- 1-2 tablespoons fresh lemon juice
Directions:
- Preheat oven to 350°F. Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, whisk together the melted butter and sugar until combined. Add the eggs, one at a time, whisking until incorporated. Add the buttermilk, vanilla, lemon zest, and thyme and whisk until combined.
- Add the dry ingredients to the wet ingredients and stir until just combined. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
