Lemon-Sugar Dessert Yorkshire Puddings

This easy to make dessert is the perfect combination of a classic British pudding and a zesty sweet treat. The Yorkshire pudding is made with a lemon-sugar batter, baked in a high-heat oven, and topped with a delicious lemon glaze. Serve this light and fluffy dessert warm and enjoy!

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon of baking powder
  • 1/2 cup of milk
  • 1 teaspoon of vanilla extract
  • 1/4 cup of melted butter
  • 1/4 cup of granulated sugar
  • 1/4 cup of freshly squeezed lemon juice
  • Zest of one lemon
  • Pinch of salt
  • For the glaze: 1/4 cup of freshly squeezed lemon juice and 1/4 cup of granulated sugar

Directions:

  1. Preheat your oven to 450F and lightly grease a 12-cup muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In a separate bowl, beat together the eggs, milk, vanilla, melted butter, lemon juice, and lemon zest.
  4. Gradually add the wet ingredients to the dry ingredients and whisk until fully combined.
  5. Pour the batter evenly into the prepared muffin tin.
  6. Bake for 20 minutes or until golden brown.
  7. While the puddings are baking, prepare the glaze by whisking together the lemon juice and sugar in a small saucepan over medium heat.
