Lemon Sour Cream Cake with Creamy Frosting

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons freshly grated lemon zest
  • 1/2 cup freshly squeezed lemon juice
  • 2 tablespoons milk
  • 2 cups confectioners’ sugar
  • 1/2 cup heavy cream

Directions:

  1. Preheat the oven to 350°F and grease a 9-inch round cake pan with butter.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Add in the eggs, one at a time, beating well after each addition. Stir in the vanilla, lemon zest, and sour cream, then add in the flour mixture and mix until just combined. Finally, stir in the lemon juice and milk.
  4. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before turning out onto a cooling rack.
  5. To make the frosting, whisk together the confectioners’ sugar, heavy cream, and lemon juice until smooth. Spread the frosting over the cooled cake and serve.
