Lemon Lavender Delight Cake

Ingredients:

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, at room temperature
  • 2 cups white sugar
  • 4 eggs
  • 1/3 cup lemon juice
  • 2 tablespoons lemon zest
  • 1/4 cup lavender extract
  • 1 cup buttermilk
  • 1/4 cup lavender buds

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lemon juice, lemon zest, and lavender extract. Beat in the dry ingredients alternately with the buttermilk. Gently fold in the lavender buds.
  4. Spread the batter into the prepared pan. Bake for 30 to 35 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean.
  5. Let cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely before frosting.
