Lemon-Earl Grey Tea Cake Recipe

This Lemon-Earl Grey Tea Cake is the perfect combination of zesty lemon and fragrant tea. A moist and fluffy cake, infused with the delicate flavor of Earl Grey, and finished off with a light lemon glaze. Enjoy a slice for an afternoon snack or as a delightful dessert.

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 4 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons Earl Grey tea leaves
  • 1/2 cup milk, at room temperature
  • 2 tablespoons freshly squeezed lemon juice
  • Zest of 1 lemon
  • For the glaze:
  • 1 cup confectioners’ sugar
  • 2 tablespoons freshly squeezed lemon juice

Directions:

  1. Preheat the oven to 350°F. Grease and flour a 9-inch round cake pan and set aside.
  2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a small bowl, mash the Earl Grey tea leaves with a spoon. Add the tea to the butter mixture and mix until well combined.
  5. Add the flour mixture to the butter mixture in three parts, alternating with the milk. Begin and end with the flour mixture.
  6. Stir in the lemon juice and lemon zest. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  8. To make the glaze, whisk together the confectioners’ sugar and lemon juice in a small bowl until smooth. Pour the glaze over the cooled cake and let set.
  9. Serve and enjoy!
