Lemon-Earl Grey Tea Cake Recipe
This Lemon-Earl Grey Tea Cake is the perfect combination of zesty lemon and fragrant tea. A moist and fluffy cake, infused with the delicate flavor of Earl Grey, and finished off with a light lemon glaze. Enjoy a slice for an afternoon snack or as a delightful dessert.
Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 cup granulated sugar
- 4 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 2 tablespoons Earl Grey tea leaves
- 1/2 cup milk, at room temperature
- 2 tablespoons freshly squeezed lemon juice
- Zest of 1 lemon
- For the glaze:
- 1 cup confectioners’ sugar
- 2 tablespoons freshly squeezed lemon juice
Directions:
- Preheat the oven to 350°F. Grease and flour a 9-inch round cake pan and set aside.
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a small bowl, mash the Earl Grey tea leaves with a spoon. Add the tea to the butter mixture and mix until well combined.
- Add the flour mixture to the butter mixture in three parts, alternating with the milk. Begin and end with the flour mixture.
- Stir in the lemon juice and lemon zest. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
- Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
- To make the glaze, whisk together the confectioners’ sugar and lemon juice in a small bowl until smooth. Pour the glaze over the cooled cake and let set.
