Lemon-Banana Toffee Pie

Ingredients:
- 1 (9-inch) pre-made shortcrust pastry
- 3 large eggs
- 1/2 cup granulated sugar
- 3 tablespoons all-purpose flour
- 3/4 cup freshly squeezed lemon juice (about 3 lemons)
- 2 tablespoons butter, melted
- 3 bananas, sliced
- 1/2 cup toffee bits
- 1/2 cup heavy cream
- 1/4 cup light brown sugar
Directions:
- Preheat oven to 350°F. Grease a 9-inch pie dish and line with the pre-made pastry.
- In a medium bowl, whisk together the eggs, sugar, and flour. Slowly pour in the lemon juice, whisking continuously until combined.
- Pour the lemon mixture into the prepared pastry shell. Dot with the melted butter.
- Arrange the banana slices on top of the lemon mixture. Sprinkle with the toffee bits.
- In a small bowl, whisk together the cream and brown sugar. Pour over the banana slices.
