Ingredients:

  • 1 (9-inch) pre-made shortcrust pastry
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 3/4 cup freshly squeezed lemon juice (about 3 lemons)
  • 2 tablespoons butter, melted
  • 3 bananas, sliced
  • 1/2 cup toffee bits
  • 1/2 cup heavy cream
  • 1/4 cup light brown sugar

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch pie dish and line with the pre-made pastry.
  2. In a medium bowl, whisk together the eggs, sugar, and flour. Slowly pour in the lemon juice, whisking continuously until combined.
  3. Pour the lemon mixture into the prepared pastry shell. Dot with the melted butter.
  4. Arrange the banana slices on top of the lemon mixture. Sprinkle with the toffee bits.
  5. In a small bowl, whisk together the cream and brown sugar. Pour over the banana slices.
  6. Bake in preheated oven for 30 minutes, or until the edges are golden brown and the center is set.
