Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups sour cream
  • Zest of 1 lemon
  • ½ cup chopped pistachios
  • 2 tablespoons freshly squeezed lemon juice

Directions:

  1. Preheat oven to 350°F. Grease and flour a 9-inch round cake pan and set aside.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time until fully incorporated. Add vanilla extract and sour cream and mix until combined.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined. Stir in lemon zest and pistachios.
  5. Pour batter into prepared cake pan and bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  6. Remove from oven and allow to cool for 10 minutes before transferring to a wire rack to cool completely.
