Lavender Honey Cheesecake on a Shortbread Crust

Ingredients:
- 1 ½ cups shortbread cookie crumbs
- 3 tablespoons unsalted butter, melted
- 2 (8-ounce) packages cream cheese, softened
- ½ cup granulated sugar
- 1 tablespoon all-purpose flour
- 2 large eggs
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 2 teaspoons lavender extract
Directions:
- Preheat oven to 350 degrees Fahrenheit. Grease an 8-inch springform pan and set aside.
- In a medium bowl, mix together the shortbread cookie crumbs and melted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese, sugar, and flour until creamy. Add the eggs, one at a time, and blend until combined. Stir in the honey, vanilla, and lavender extract.
- Pour the cream cheese mixture over the shortbread crust and spread evenly. Bake for 30-35 minutes, or until the center is set. Let cool before serving.
