Honey Walnut Baklava Cookies Recipe
These honey walnut baklava cookies are a delicious and easy-to-make treat. Made with a buttery shortbread cookie base and filled with a sweet honey-nut filling, these cookies are the perfect combination of crunchy and gooey. Serve them with a cup of tea and you have a delicious dessert that will satisfy your sweet tooth.
Ingredients:
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup finely chopped walnuts
- 1/2 cup honey
- 2 tablespoons freshly squeezed lemon juice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Directions:
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in vanilla.
- In a separate bowl, whisk together flour, baking powder and salt. Gradually add this mixture to the butter mixture, stirring until just combined.
- Using a small cookie scoop, drop dough onto prepared baking sheets, spacing cookies about 1 inch apart. Bake for 12-14 minutes, until cookies are lightly golden brown. Allow to cool completely on baking sheets.
- In a medium bowl, combine walnuts, honey, lemon juice, cinnamon and nutmeg. Stir until well combined.
- To assemble cookies, spread a teaspoon of honey-nut mixture onto the flat side of one cookie. Top with another cookie, flat side down, to form a sandwich.
- Repeat with remaining cookies. Store in an airtight container for up to one week.
