Homemade Chicken Pot Pie with Puff Pastry

This savory homemade chicken pot pie with puff pastry is the perfect comfort food. The crispy puff pastry crust is filled with a creamy filling of chicken, carrots, potatoes, and peas. With a few simple ingredients and a few easy steps, you can make this delicious dish in no time.

Ingredients:

  • 1/2 package puff pastry
  • 2 tablespoons butter
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup diced potatoes
  • 1/2 cup frozen peas
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cups shredded cooked chicken
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg, beaten

Directions:

  1. Preheat the oven to 375 degrees F. Grease a 9-inch pie plate and set aside.
  2. Roll out the puff pastry and cut into two 9-inch circles. Place one circle in the bottom of the prepared pie plate and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the onion, carrots, potatoes, and peas and cook until the vegetables are tender. Sprinkle the flour over the vegetables and cook for 1 minute, stirring constantly.
  4. Stir in the chicken broth and cream. Bring to a simmer and cook for 3 minutes, stirring constantly. Remove from the heat and stir in the chicken, salt, and pepper.
  5. Pour the chicken mixture into the prepared pie plate. Place the second puff pastry circle on top of the filling. Crimp the edges to seal. Cut several slits in the top of the pastry to allow steam to escape.
  6. Brush the pastry with the beaten egg. Bake for 25-30 minutes, or until the crust is golden brown.
  7. Allow to cool for 10 minutes before serving warm.
