Heavenly Gluten-Free Almond Cake

Ingredients:

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 teaspoon pure vanilla extract
  • 2 large eggs, lightly beaten
  • 1/4 cup sliced almonds
  • 2 tablespoons powdered sugar (optional, for topping)

Instructions:

  1. Preheat oven to 350°F. Grease an 8-inch round cake pan with non-stick cooking spray.

  2. In a large bowl, whisk together almond flour, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together coconut oil, maple syrup, and vanilla extract.

  4. Add eggs to wet ingredients and whisk until combined.

  5. Pour wet ingredients into dry ingredients and mix until a thick batter forms.

  6. Pour batter into prepared pan and spread evenly. Sprinkle sliced almonds on top.

  7. Bake in preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  8. Let cool for 10 minutes before transferring to a wire cooling rack.
