Gluten-Free Vanilla Cake with Honey Frosting

Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup coconut sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup honey
  • 2 tablespoons butter, softened
  • 2 cups powdered sugar

Directions:

  1. Preheat oven to 350°F and grease a 9-inch round cake pan with baking spray.
  2. In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
  3. In a large bowl, beat together coconut sugar and butter until light and fluffy. Add eggs one at a time, beating until fully incorporated. Stir in vanilla extract and buttermilk.
  4. Add dry ingredients to wet ingredients and mix until just combined. Pour batter into prepared cake pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Let cool completely before frosting.
  6. In a medium bowl, beat together honey and butter until light and fluffy. Add powdered sugar and beat until completely combined.
  7. Spread frosting over cooled cake and enjoy!
