Gluten-Free Vanilla Cake with Honey Frosting

Ingredients:
- 2 cups gluten-free all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup coconut sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1/2 cup honey
- 2 tablespoons butter, softened
- 2 cups powdered sugar
Directions:
- Preheat oven to 350°F and grease a 9-inch round cake pan with baking spray.
- In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, beat together coconut sugar and butter until light and fluffy. Add eggs one at a time, beating until fully incorporated. Stir in vanilla extract and buttermilk.
- Add dry ingredients to wet ingredients and mix until just combined. Pour batter into prepared cake pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let cool completely before frosting.
- In a medium bowl, beat together honey and butter until light and fluffy. Add powdered sugar and beat until completely combined.
- Spread frosting over cooled cake and enjoy!
