Gluten-Free Orange Almond Flour Cake

Ingredients:
- 2 cups almond flour
- 1/2 cup coconut sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup orange juice
- 1/4 cup olive oil
- 2 teaspoons orange zest
- 2 eggs
- 1 teaspoon vanilla extract
Directions:
- Preheat oven to 350 degrees F. Grease a 9-inch round cake pan.
- In a large bowl, whisk together almond flour, coconut sugar, baking powder, baking soda and salt.
- In a separate bowl, whisk together orange juice, olive oil, orange zest, eggs and vanilla extract until combined.
- Pour wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
- Pour batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
