Gluten-Free Chocolate Walnut Cookies

Ingredients:
- 2 cups gluten-free all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup coconut oil
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups semi-sweet chocolate chips
- 1 cup chopped walnuts
Directions:
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the coconut oil, brown sugar, and granulated sugar until light and fluffy. Beat in the vanilla extract and eggs.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Fold in the chocolate chips and walnuts.
- Using a spoon or cookie scoop, drop the cookie dough onto the prepared baking sheet, about 2 inches apart.
- Bake for 12-14 minutes, or until the edges are lightly browned.
- Let cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
