Gluten-Free Banana Bread Loaf Recipe

Ingredients:

  • 3 ripe bananas
  • 1/3 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cup gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Directions:

  1. Preheat oven to 350F/175C and grease a 9×5 inch loaf pan.
  2. In a large bowl, mash the bananas with a fork until smooth.
  3. Add in the melted coconut oil, brown sugar, eggs, and vanilla and stir until combined.
  4. In a separate bowl, whisk together the gluten-free flour, baking soda, cinnamon, and salt.
  5. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire cooling rack.
