Gluten-Free Banana Bread Loaf Recipe

Ingredients:
- 3 ripe bananas
- 1/3 cup coconut oil, melted
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cup gluten-free all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Directions:
- Preheat oven to 350F/175C and grease a 9×5 inch loaf pan.
- In a large bowl, mash the bananas with a fork until smooth.
- Add in the melted coconut oil, brown sugar, eggs, and vanilla and stir until combined.
- In a separate bowl, whisk together the gluten-free flour, baking soda, cinnamon, and salt.
- Slowly add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire cooling rack.
