Gluten-Free and Dairy-Free Orange Polenta Cake

Ingredients:

  • 1 cup gluten-free flour
  • 1 cup almond meal
  • 3/4 cup polenta
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegan margarine
  • 1/2 cup sugar
  • 2 tablespoons orange zest
  • 1/2 cup orange juice
  • 1 teaspoon vanilla extract
  • 1/4 cup almond milk

Directions:

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch round cake pan.
  2. In a medium bowl, mix together the flour, almond meal, polenta, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the vegan margarine and sugar until light and fluffy. Beat in the orange zest, orange juice, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until combined. Stir in the almond milk until the batter is smooth.
  5. Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
