Gluten-Free and Dairy-Free Orange Polenta Cake

Ingredients:
- 1 cup gluten-free flour
- 1 cup almond meal
- 3/4 cup polenta
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegan margarine
- 1/2 cup sugar
- 2 tablespoons orange zest
- 1/2 cup orange juice
- 1 teaspoon vanilla extract
- 1/4 cup almond milk
Directions:
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch round cake pan.
- In a medium bowl, mix together the flour, almond meal, polenta, baking powder, baking soda, and salt.
- In a large bowl, cream together the vegan margarine and sugar until light and fluffy. Beat in the orange zest, orange juice, and vanilla extract.
- Add the dry ingredients to the wet ingredients and mix until combined. Stir in the almond milk until the batter is smooth.
- Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
